Cam Nelson is an experienced chef with more than 20 years of experience in the industry.  A native of rural Alberta, Cam’s path to the kitchen was inspired by his surroundings – an environment which fostered a deep understanding and appreciation for food – how it’s raised, how it’s grown, and how it makes its way from farm to table. 
 
An independent spirit, Cam left home at 16 to work in Alberta’s oil fields, where he spent several years in camps, running crews in the harshest of climates and environments.  Looking for inspiration, Cam moved to Edmonton, where he quickly found his place in the kitchen and began his career in the restaurant industry.  It was here that Cam met Sonny Sung (of Bisteca and Sorentino’s Group), with whom he established a mentor relationship, as Sung encouraged Cam to continue moving forward by learning from as many sources as possible to perfect his craft.
 
Since re-locating to Toronto seventeen years ago, Cam has worked in the kitchens of the city’s best restaurants, with stints Jump, Canoe, Bymark, Nyood, and most recently as head chef at Le Notre Bistro on Harbord Street. Beyond the kitchen, Cam spent time developing his business expertise, consulting on restaurant operations for locations across the city.  A father of 3 (Nevaeh, Olivia and Max), he now resides in the city’s east end with his partner Danielle.

Danielle is a restaurant industry newbie. A vegetarian for 25 years, the irony of now owning a meat-forward restaurant is something everyone who knows her gets a kick out of. She and Cam are partners both in life and in business (and they fully admit they would not be together if she hadn’t reformed her vegetarian ways). She is passionate about good, healthy food and farming practices. 

In her other life, Danielle is the Chief Marketing Officer at Hubba, a wholesale marketplace that connects independent retailers and emerging craft brands. With a strong presence in the Food and Beverage space, Hubba is the perfect vehicle for informing the retail selection in the shop.
